The Pizzaiolo is the first domestic countertop oven to hit 750°F and cook an authentic wood fired style pizza in 2 minutes. It replicates the three types of heat generated by a brick oven - conductive, radiant and convective. Our Element iQ system also replicates the ideal baking environment for New York, Pan, Thin & Crispy and Frozen pizzas. Enjoy the confidence of cooking with Breville+. The full experience is free when you register your oven.
Breville+ is a new ecosystem of guided recipes, live and on-demand classes, cook guides and more. Your culinary co-pilot gives you step-by-step guidance on 40+ recipes, all tested and tuned to your pizza oven.
Element IQ® system
Our Element iQ system's algorithms steer power to where and when its needed to achieve the optimum cooking performance. Innovative cavity design utilizing sensors, PID temperature control and optimized deflector technology - the system adjusts what heating elements are on and the power of each to ensure your chosen pizza is cooked to perfection.
Conductive heat for base char control
The independently controlled, dynamic deck has been designed to sit directly above responsive incoloy heating elements. The natural cordierite stone is heated quickly and evenly to maintain the correct temperature, cooking the pizza base to the desired finish, with the right amount of char for the classic wood fired finish.
Radiant heat for leopard spotted crust
Intense radiant heat is evenly controlled by Breville's patent pending heating elements so you no longer need to rotate food while cooking. Heat intensifying parabolic reflectors maximize the efficiency of the top heating elements by reflecting the energy onto the crust. Integrated deck to door design moves the pizza closer to the elements.
Convective heat for baked toppings
For wood fired and Neapolitan style pizzas, the optimized deflector shield has been designed to protect your fragile toppings from intense heat while reflecting radiant heat towards the crust to achieve the leopard spotted effect. For other pizza styles, inner element dynamic switching ensures that toppings, cheese and dough are evenly browned.
Favorite pizza styles automatically
The Pizzaiolo comes with a range of preset cooking functions including the authentic "Wood Fired", iconic New York, deep and delicious Pan pizza, bar style Thin & Crispy and even Frozen pizza setting. Impress family and friends and create authentic home made pizzas with recipes available in the Breville+ app.
Customize with manual mode
Fully customize how the oven functions. Manual Mode allows you to individually control deck and top temperatures and to select which heating elements are in operation. Choose the ideal heat: select Crust Only to achieve leopard spotting on a Neapolitan style pizza or Even Heat for other styles where toppings, cheese and dough are evenly browned.
Heat retention & safe use
The combination of double-pane heat resistant front window and multi-material insulation surrounding the heat chamber ensures the extreme temperatures remain inside the oven cavity while keeping the outside surfaces as cool as possible.
We have had this unit since April 2020 and, it has served us well. The oven does what it dies very well and, efficiently. I would only say always order an extra Pizza Stone because even if you are very carful the coating is brittle and, if don’t wait until the stone cools you run the risk of it cracking. We wait 12-24 hours to clean the stone and even then never submerging it and the coating has aged and flaked in odd places. It is a great oven, we have had many pizzas and, hope to have many more. Thank you Breville.
Excellent, but liked 1st generation better

Overall, the Smart Oven Pizzaiolo is a great oven; especially if you're chasing Neapolitan-style pizza, but don't have access to outdoor space and the options that are available with that luxury. This is our 2nd oven. We had the 1st generation, and it had an issue after making just over 300 pizzas. Thankfully, Breville replaced our old unit with this new model, but one of the big changes they made actually is a big negative more me: the new deck is now round. Instead of covering the entire bottom like the old version, the new deck is round. It allows for more opportunity to things to slip under the stone, creating more tedious cleanup under the stone. I find pulling the stone out and placing it back in to be more frustrating, as well. I understand the older stone was prone to breaking, but I think a better solution would've been to improve the supports instead of shrinking the deck. The new deck may improve the placement for the best bake, but you also need to have a good and precise launching technique. Speaking of, the pizza peel that comes with the oven isn't ideal for launching. It's stainless steel, which is perfect for turning pizzas midway through the bake and removing hot pizzas, but it retains heat in between pizzas, so you have to either use a lot of flour, use a lower-hydration dough (defeating some of the benefits of the extreme heat), or wait long enough to cool the peel completely. Otherwise, your dough will be prone to sticking and tearing upon launching. I recommend cutting down a wooden peel or finding an 11" wooden peel for preparing and launching your uncoooked pizzas. You won't have the heat retention issues and you can use far less flour to reduce those burnt bitter flour flavors. That said, once you clean and launch your pizza onto the deck, this oven is amazing for the actual cooking part. Heats up super fast, cooking pretty evenly, and is capable of getting hot enough for really good Neapolitan pizza. If your dough is good, the oven will take good care of it and cook it really well! We use our oven to make 10 Neapolitan pizzas every week over the span of 2 days each time. I hope this oven lasts longer than 300 pizzas, but Breville's support has always been great, and as long as it's working, you're not going to find anything better for making indoor pizza.
Pizza oven... worth the price tag!

We’ve been using this pizza oven for months with no issues and DELICIOUS pizza! It was a splurge, but if you order pizza even once a month you can justify the expense pretty easily. We moved from Chicago to an area with.... shall we say... LESS than great pizza.... this has been a flight for the whole family.
